Any suggestions on which courses do I need to become a chef and own a restaurant in Phoenix?

I think you just need money and a concept.

Do you cook now? Have you ever worked in a restaurant?

There are certainly culinary schools where one can learn to be a chef. Being a chef and owning a restaurant are vastly different things. Most chefs don't own their own restaurants. The money involved in starting up a restaurant, (and maintaining it) and the time and work needed to run the business of the restaurant, are not insignificant. It's a very risky business.

Go read Anthony Bourdain's book, he says that culinary school is a waste of time & money. Find a job as a prep cook someplace and work your way up.

Yup. Working your way up, gaining experience, and building relationships is still the best course of action for this field

I sorta agree with this. Experience is best.

The problem is 5yrs experience as a short order cook in Denny's may not be enough to get you the job you want. Maybe read some of the books by Bourdain. Study some other top chefs. Try their recipes. You will have to start with a job that matches your experience and skill. So be prepared to start low in the beginning.

The only thing I know about owning a restaurant is if I had that much money I would retire.

Good luck.
