It is the first year of the event, we are hoping to make it an annual event. It is put on by the Cajun Cactus Foundation, the same group that started the Great Cajun Cookoff & Food Fest five years ago.

The Cajun Cactus Foundation is a 501(c)3 whose mission is to unite Southerners living in the Valley, support Gulf Coast and Phoenix charities, and impart Southern charm, culture and hospitality.

PhoenixDude - it really isn't a lot of work once you get the hang of it, check out the video on our website to help you get started. But, we also offer tickets without boiled crawfish for those that don't eat them they include jambalaya, crawfish pasta, beer, soft drinks, etc. Visit Great Cajun Crawfish Boil for details.

It actually tastes better than lobster, especially with the creole spices used to season the boil.

And its easier to eat than lobster.....

How To Eat Crawfish:
Crawfish are eaten with your hands
(don't ask for utensils; you will only be laughed at)

Don't be intimidated by that big pile of cooked crawfish.
With one hand, grasp the crawfish head. Grasp the tail with your other hand. Gently squeeze the tail end of the body close to where it joins the head. Hold the head steady and gently twist the tail end, still applying pressure. The meaty end will twist out of the head

Put the head aside for the moment. Slide a finger or thumb under the first few segments at the top of the tail and peel away the top partially expose part of the tail. With the shell still partially intact, bring the tail meat to your mouth and sink your teeth into the exposed meat. Chomp down on it, and it will pop into your mouth as you leave the tail behind.

The part that shows if you are a true Cajun(or Creole) or not is if you eat the head. Take the head and suck the hot, spicy juices out of it.

Hey, if you don't care to eat crawfish, go anyway. Go for the social aspect - Louisiana folks are some of the friendliest people you'll ever meet! I'm trying to talk a friend of mine up here into coming down with me. We're both from the Gulf Coast and while ABQ is quite friendly, we still miss that "southern touch". Although I suppose I should leave my War Eagle shirt at home

I have a hard time thinking about slurping the juice out of the head of the little guy, but love my seafood....thinking about it..... Really sounds like a good time....

They do have tickets that don't include crawfish as well, they include jambalaya and crawfish pasta.

I think Applebees years ago had a pasta with crawfish? along with sausage, chicken and shrimp maybe...somebody did and I was really dissappointed when they stopped it.
