I have to meet friends in New Stanton to travel East on Turnpike. Where is a safe place to leave my car overnight????

A few years back I had to do the same thing, roughly once a month. I used to leave my car in the far corner of the Eatn'Park in New Stanton, but the last time I did, I got a note on my windshield to cease parking there.
Next time , I parked in the lot of the motel next to McDonalds, with no problem. My guess is that the bigger the lot, the better chance you have of no one spotting you, especially if it's only a one time situation.
There is also a Cracker Barrel restaurant on the other side of I-70; you might try there. Perhaps it would be a good idea to go in anywhere you may park, and ask permission, if it's only for one day. Good Luck.

There's actually a lot almost right next the new Stanton toll plaza that you are allowed to park in. Sorry I can't give any more specifics & only know about it because I picked up a friend to carpool to DC last year & he was parked there.

Go with Sheetz. Lots of traffic there and they are open 24-7. Nobody will notice. Also, there are a lot of motels right there too, like a Howard Johnson, super 8, days inn, and fairfield. I doubt these places really check all the vehicles each night and have them towed. I've ditched my car before at a hotel by the airport and took their free shuttle to the airport to avoid paying for extended parking there. Never had an issue. I doubt you will have one in New Stanton either.
