What is there to do in the State College area; non-commercial, off the beaten track hiking trails? Places to visit that you recommend that are must-see attractions while there? This can include the outskirts too.

If it's something you might find of interest check out Penns Cave in Centre Hall nearby. It is a cave tour by boat - the cave contains an undrrground lake

My best friend is a professor at PSU, and I visit her about once per month. We make it a point to hike Mt. Nittany every spring!

Black Moshannon State Park is great for outdoorsy things.
I hear PSU's arboretum is amazing but have never been there personally.
There are several rivers/streams that have convenient drop off/pick up spots for kayaking/canoeing places within 30-45 minutes drive (Lewistown, Red moshannon, and West Branch of Susquehanna shawville/deer creek/Karthaus)

I've been there. Pretty interesting. I like when they turn out the lights to let you experience total darkness.
