Gimme a plate stacked with pierogis (I'm partial to potato and sauerkraut, but hey: Whatever floats yer boat), a dollop of good strong mustard, and a nice Polish beer and I'm a happy, happy camper.

Applebees is where you go when everything worth eating is closed and they're the only clowns still open. I'll occasionally go in and get a Quesadilla Burger. But at least i recognize how lame i am when i do it.

Does that make me a snob? Probably. But i can live with that.

When I have visitors in from out of town, I take 'em out for a fine Italian meal. If they don't like Italian food I take 'em to Olive Garden.

Yea, we have Red Lobster. That's another lame chain, but i'll eat there in a pinch. But i'd never actually RECOMMEND it to anyone. I'd much rather eat at the Blue Fin Bistro, or something like that.

That's what I think of cuisines like Cajun and Creole as well. Nothing wrong with that! Or, "Tex-Mex" for that matter.

An example of why I think your post is wrong that comes quickly to mind is an old-fashioned New England clam bake. We've got great seafood up here (as does the South, of course) and that alone has inspired the creative use of local ingredients. I'd say that is but one example of distinctive regional cuisine.
