I would assume through a series of legal entities (shell companies,) disguising the money under a variety of financial terms that keeps it from being marked as income and thus taxable. Moving the source of the income off shore helps too, such as registering your business in a country with no or low taxes. In some cases you can then redirect your paycheck directly to the business, and pay all of your bills out of that account.
Perhaps a competent lawyer and tax advisor might be better able to help you in hiding your millions though?
