This is just an Australian / European / African thing to not tip. Americans go out to eat to splurge and love adding cash directly into the pocket of a server. Patrons are happy, service is happy, pleasant attitudes all around in the richest country in the world.

I'm not a fan of a tip-driven salary. I just don't know if anyone can agree on if/how to replace it. This country is always resistant to change.

how happy is it for the chef, kitchen assistants or waitress stuck on the quiet shift though?

solution: Min wage or more for all staff.

50/50 split for pooled tip amongst ALL staff that worked that shift (50 to staff, 50 to owner)

sound good?

How about quit trying to tell people how to spend their money? That's the entire problem. People, even some that have good intentions, trying to run others lives for them.

The better, and thus higher paid workers, don't work the quiet shifts.

In college, I waited tables at a high end steak house.. I gave outstanding service and recieved great tips. Today when I go to a restaurant I tip accordingly to the service recieved. If I get great service I leave a great tip. If a waiter or waitress can't be bothered then I still leave a tip, but it is small enough to let them know of my displeasure with their service. It was a great incentive for me when I worked in the food service industry and it seems to work even today. The places I go know me and I usually get exceptional service.

You are still tipping and can't force people to share money handed directly to them by someone who only wants THEM to have it. So no, not good. There would have to be a real push to let people know tipping isn't allowed AT ALL. Getting stuck in a whishy-washy middle ground is the problem we face.
