This makes no sense to me. Military actions are hardly governed by principals.
You'll find almost every nation is a rational actor and Iran is no different. They are not, as you claim, crazy and instead they are weighting the odds we will intervene if they go for a nuclear weapon's program. We saw them respond by becoming less adversarial when Bush was talking tough against them, they even suspended their whole nuclear program and allowed UN inspectors in to make sure the systems stayed shut down. They've since reopened their enrichment plants largely because they felt the danger of a US intervention is past now and seeing Republicans act weak, refusing to stand up and enforce what we said we'd do, well... That shifts Iran's calculus towards "the US won't actually force us to stop so let's get nuclear bombs because then we're safe from attack".
It's simple, it's straight forward, and it is reality.

The Chinese have shown interest already that they want to be more involved in world affairs and in particular in the Middle East. Also Islam is a recognized religion in China so that be another reason for them to want to have a hand in Middle East affairs.
Doubtful, most Chinese aren't religious and only about 2% identify as Muslim.
