So it is scary for a restaurant to market towards a type of demographic to increase profits? I am confused with this, what is wrong with Subway doing this?

There have been Kosher Subway shops in Jewish neighborhoods in the US, since 1986. Ham and bacon were removed from the menu. Cheese is made from soy. These stores close for the sabbath.
These are franchises owned and operated by people of Jewish faith.

I live 15 min from a heavily Jewish town and neighborhoods, never seen any Kosher chain restaurant. Google Monsey, Kiryas Joel, Spring Valley..... All Jewish towns
