I just find it funny that when people say American, they mean/and think "from the US"; however, if you are from Cuba, Venezuela, Canada, Peru, etc, you are an American.

That is only the common term for a U.S. citizen and you know it. I don't know of any Cuban, Canadian, etc. that refers to themselves as an American.
All I'm doing is pointing out that, technically speaking, an American is anyone from North, Central or South America.
I understand that in most people's minds "America" is thought of as the US.
It's not the standard though for anyone to refer to themselves by the continent they live on. I seriously doubt that Germans, Italian, English, etc. call themselves Europeans for the most part. They would refer to themselves by the country that they are a citizen of.
At the end of the day we are all human and in day to day life we all call each other by our names.
If you want to go around calling yourself African-American go right ahead, however a lot of people will find it strange because they don't like the 1930s style of division by something minor like skin color. to me its like someone walking around calling myself a Blue shirt - American on days they wear a blue shirt.

People in these countries refer to themselves as Cubans, Venezuelans, Canadians and Peruvians.
I'm me! I don't view myself as a Euro-mutt American. What my overseas ancestors did in the old country has almost no bearing on how I lead my life. "Race" is pretty much a hypothetical construct devised by people to describe certain physical characteristics of other people. It is not really any kind of biological description. You're either a human or not! Unless you're a Neanderthal, like the Geico cavemen, you're pretty much the same as the other two-legged Homo sapiens that roam the planet. Even the term "Native American" is a misnomer because humans aren't native to the Americas. First Americans ...perhaps is a better term to use. Individuals rule!
