I'm all for religious freedom but you have to abide by the rules in whatever country you are in. My sister and her husband lived in Saudi for a year. She had to cover her head and body when she went out in public. Their country, their rules. You don't sue because you don't like the rules.
In America, you sue for anything ,of course you sue precisely because you don't like the rule.

A cowboy hat isn't a religious symbol, a hijab is. If they can't prove there is a necessary reason to this then she is going to win a tidy settlement, and they will be out of jobs as the metaphorical **** rolls down hill.
Religious symbol does NOT matter if it covers the head: it comes OFF for a mug shot. Then it can be put back on, no big deal.
Hair color is often times used on someone's credentials. If it's part of the reg. process when booking a perp, she's out of luck.
