That graph is a guess at what the temps have done. Draw a straight line, take out the big jump invented by the 2nd rate scientists who dreamed this scam up and it will show a nice, even increase.

No, the older temperatures are not a guess, and the big jump since industrialization are measured temperatures by several different methods....Of course to keep your conspiracy theory alive you will no doubt accuse them of using broken thermometers, or some such.
