If you can twang it, it's legal.

Matt Dillon called people by their first and/or last name.

I don't recall Mr. Dillon ever calling anyone "sir".

He had too much respect for people, good or bad, to call them sir.

I think he did ma'am the women, though.

I think it was expected, what with women only being women, an' all.

You said that you look younger than your age. How is the server supposed to know your age? Maybe you look young and fresh faced. I take it as a compliment that people don't think I'm as old as I am.

If it bothers you so bad, correct them and go on about your business. You seem to have a chip on your shoulder because strangers do not address you how you think they should.

Not reading the whole thread, but responding to the OP....

In a business setting, every time. Ma'am or Sir.

Any other setting, kinda play it by ear. Guessing a person's age sort of determines the sir/ma'am thing. But always be polite and respectful.

A smart server will refer to you as Miss. I use the phrase "this gentleman" all the time when referring to someone and that can be of any age.

When in doubt, always choose the phrase that flatters.
