That's not exactly what the professor said isn't it ? Other groups of people were also mentioned.
But race what mentioned. That is called discrimination. Racial discrimination is explicitly illegal.

Actually, you support the David Duke agenda, just for the other side.
Do you not understand the meaning of the Trump presidency? This kind of idiotic projection of racist values will no longer be tolerated. And this is just the beginning.

Do you understand that "people of color" means people who are not white? Saying that people of color are preferred is exactly the same thing as saying that white people are not wanted. The fact that other types of people are also mentioned is irrelevant.
If you were the professor, how would you select the students.
Since it's an intro class and not for geology majors, all students at the school should have an equal opportunity to enroll. I would accept any registered student who signed up until the class was full.

So using your logic, since all the criteria she listed have to be met and ... that leaves only poor freshmen and sophomores from South America or Africa...
In the first place, first generation students, low-income students, and students early in their college careers could very easily be white, as could international students, for that matter.
In the second place, there is a difference between encouraging someone to apply and excluding all others. She said nothing at all about refusing to accept white students.

This.
If there are not enough slots for everyone who wants to take the course, add more sections.

You sure you don't want to rethink this?
We have no idea which of her various criteria she intends to give most weight to, but race is the first one mentioned. Using race as a selection criteria for college class enrollment is obviously racist, and probably illegal. I doubt it would stand up in court if anyone chooses to challenge this.

She never said it was a selection criteria, she said she especially encouraged these students to apply. Can you not see that it isn't the same thing?

She said, "I am especially interested in seeing... requests from students of color." That's racist. Why do you support racism?
