Airlines do plenty of things stupid but the "remain seated" sign is there for a reason. If she had lost her balance because of turbulence or something she would have blamed the airline and sued.
If they allow one to get out of their seat, no one is going to and what a mess that could cause.
Ummmm, didn't she have to get out of her seat to pee in the cup, she just did not go down the isle, maybe she should have just peed on the floor and the attendant could clean that up.
And people wonder why our country is so screwed up. It is because of attitudes like this where somehow some people feel dealing with a corporation with deep pockets is a means of getting rich due to frivolous lawsuits.
No one is entitled, nor should they receive compensation for such a minor thing. Even if they did sue, they certainly wouldn't be entitled to millions, nor should it be awarded. Yet I'd but the same people with that type of an attitude complain about airfares and insurance rates being to high.
Sounds unlikely that we're getting the whole story.
If the plane is on final descent, too bad. Stay strapped in, because the crew is responsible for the safety of 200+ people, not just the conveneience of your sorry self.
And yes, sometimes cabin crew walk around after the fasten-seatbelts light is on. Flight crew will try to get get passengers back in their seats before turbulence starts. The cabin crew has a job - that of making sure the cabin is safe for turbulence. No open overhead compartments or loose luggage or whatnot. If the serving carts are out, they need to be secured. And they can't do that when half the passengers decide that surely that silly light is for other people, not meeee...
Next time you fly, notice how often the flight attendants go down the aisle with their beverage carts while the seatbelt sign is on.

Still, the flight attendants continued to serve drinks to the last of the passengers before taking their own seats.
Well, yes. Turbulence is 10 minutes out, the cart needs to roll down the aisle to where it lives, why not give drinks out if there's time? But that only works if the aisles are clear. Hence, get people in their seats.
