The thing with this is that men generally don't care and if they don't like it, then they'll just go somewhere else. If this was reversed and women had to pay more, there would be international outrage.
If they want to address the gender pay gap in a way that actually resembles the real gap, what they would do is carefully not what drinks people buy. They'd look at what is most commonly bought by just men and just women, and then price those drinks accordingly, as the gender pay gap is more about what jobs women take, not about them being paid less for specific jobs.
I'd be certain to patronize this place on a regular basis, and every time I left a tip for a female staffer I'd be sure to point out that I was re-balancing their sexist policy by intentionally being short on the tip. Maybe 5-10% instead of the 20+% I'd normally leave.
