Interesting ... I am going to watch for that.

There are several possible reasons, including defensiveness, insecurity, disinterest and anger. It would be a good study, each time he lies (as inevitably he will), check his posture to see how often he crosses his arms as opposed to waving them around, and note the venue.

This.

Folding of the arms is a defensive stance. It puts a barrier in front of the person. Doesn't necessarily mean someone is lying, but it almost always indicates uncomfortableness or uneasiness. It could also just mean the person is cold.
