Consider police in the pre civil rights south...they were enforcing laws against black people, what bathrooms they could use, what section of the bus they could sit in, etc...do you actually think this was acceptable 'just because they were doing their jobs'?
Are you saying cops should disobey the law and/or deparment policy?

Are you sure you want american cops to follow that route?

If an employee of a coffee shop wrote that on a cup back then, the boss would have smacked the hippy in the head and tossed him right out the door. Some 'ole boys would have given him a few more bruises to boot. Cops always used to get free coffee in many shops and diners.

Protesters got regularly beaten too. So they paid the price.

Now? They expect to be able to taunt the police for fun and then get a go fund me when they are fired.

Big difference.
