It does become absurd. That if you're going to make a caricature out of a demographic as your mascot, it better be someone white of european descent. And then, you can even make them a big dumb farmer or an axe wielding angry woodsman. Don't make them a proud, powerful Native American.
Remove the hood, put on a cap and wife beater and rename it Redneck Joe's. Cowboy Joe's with a cowboy hat might work even better and be less offensive.
