Those are all good things to be on the watch for, but I would think you would need to be inside the poll building to see and hear this stuff. You can't just go in and stand around and watch. You need to show ID, you are given a ballot, and when you are done, you leave. They don't let you just hang around the school gym (my poll location is a school gym). There are people there watching, but in an official capacity. But I don't think Trump is calling for people to volunteer to be election judges.

I think the kinds of poll watchers Trump is calling for are the ones who stand outside and watch.

That said, I really don't know why anyone would be bothered by the idea of poll watchers. No one standing around outside watching me stand in line or going in has any clue who I am voting for. So why would I be intimidated? I think people need to remember that, unless you are wearing tee-shirts and buttons and such, they have no idea if you are voting for Trump or Biden. I would also recommend just telling the Democratic party rep and the Republican party rep who both try to give you sample ballots, "no thank you." Or take both. This too will keep your voting confidential.

And you think that

1. there aren't already excruciatingly unbiased old people with poll worker badges already doing that

and

2. you would be able to see that, if it were going on?

Here's what WILL happen, and people are going to get really pissed off about it and pretend to misunderstand.

People will attempt to wear MAGA clothing and hats, and expect to be able to enter the polling place wearing that, and will be turned away, and they'll imagine they were turned away because they are Trump voters, and not because they're violating the no-campaigning at the ballot box rules.

There was a movement to sell T-shirts with RGB's likeness, with the caption "she sent me", but quickly the left warned everyone that you can't actually WEAR those to vote, that's a violation.

Is the same thing going on with the right? Are they informing their voters that they can't verbally campaign for Trump at the polling place, and can't wear Trump gear?

We know there are very biased poll workers doing these things. Not everyone takes their job seriously.

Its like jobs with contact with children. Sexual predators seek those jobs out. And crooked political people will seek out jobs where they can impact the vote.
