It isn't biological sex. Even then there's animals which are hermaphroditic. I know you'd very much like it to be as black and white as possible, but I fear you misunderstand gender and sex and are conflating the two, perhaps on purpose even.
If you think any of this is actually new you should look at history. The whole non-binary/third gender/etc concept exists in many cultures and religions and dates back at least to ancient Egypt.

And there are also apparently those people who have "love" for horses as a core part of their orientation, identity and gender. There is even a documentary on one of them....

I accept two biological sexes - despite some obvious issues with some species that can switch. I asked you what gender is, because the two are not interchangeable.
Technically it is two but there are those very rare cases of people being born with both sex organs so I answered 3. But aside from those rare cases, it's 2.
