We're probably close to 60% or more either vaccinated and/or covid recovered.

There is no known number for herd immunity or if we can even achieve herd immunity.
"They" stopped talking about it because it didn't happen in countries that got high percentages of vaccinated.

Achieving herd immunity is a process, already partially complete. As vaccinations have increased new infections have declined.
