Looks like to me, she's being used by the movement because of her disabled status. Hope Julie M doesn't get a criminal record that further constricts her life choices.

They are New Yorkers, so right there that tells you this is a planned media event. New York residents are not going to actually go out to dinner at a tourist trap restaurant in Times Square of all places, c'mon now. It was chosen because it is highly visible, they would have an audience, and they'd get media attention.
They were making a point, nothing more. You may agree with their point, but don't be fooled that it was actually a group of people just trying to go out to dinner. The disabled woman was simply a nice touch to add to their media plan.

ADD: It appears that they are attempting to dine in chain restaurants only. No mom and pop restaurants.
