I dont know what kind of horses they have at the ranch but in Wagons East John Candy was on horseback at 375 lbs.

Usually ranches offering rides provide older horses because as the oldsters are more docile.
Per John Candy who knows.......the prop people may have brought in a 2,500 pound Percheron stud for his 375 lbs.
