Because of the unusual volume of mail-in ballots, it took a lot more time to do a hand count than it took to tally the electronically recorded votes, e.g. several days.
Perhaps you should volunteer to work counting ballots in the next election to speed the process up.

Florida did NOT count the votes in one night. They begin three weeks ahead of election day to process the absentee ballots as they come in. Many states wait until the election is over to begin doing the absentee ballots.
Secondly, the reason there is a big jump in votes counted late at night or the next day is that the big cities take a lot longer to count than the small cities and rural areas. And the big cities are usually where the leftists live.
There is nothing mysterious about this.
