Because conservatives believe that the only way a minority could possible achieve anything is through special considerations, not through merits. I also notice that conservatives rarely mention gender when they whine about affirmative action. They don't view McCain's pick of Sarah Palin as affirmative action, even though it was. I'm even inclined to think that gender is one of the reasons why Obama picked Kagan, yet there is not this huge roar about "affirmative action" at least not as much as Sotomayor, who was Hispanic.
A lot of reasons. For some, there's a legitimate opposition to AA in a truly principled manner. For others, it's just an excuse to direct hostility towards minorities. I've seen more than a few people who see a minority meeting success and automatically cite affirmative action.

Because the American spirit is such that everyone should hammer out their own salvation. In a post-1964 world, there's no need for laws that give an artificial boost to anyone, anywhere. The Supreme Court ruling on the firefighters promotions in New Haven made that very clear.
