Just tried the new Healthy Food Fast restaurant off St. Lucie West. It just opened 3 weeks ago right next to Five Guys and Platos Closet. It is pretty good and is pretty much the same as Bolay.
Home Page - Bowl Spot

Nice to have another option in the area.

I agree to have options, but gluten free diet? besides it taste bad it could be harmful to you unless you have celiac disease. Check this out. Tacos-the taco truck on Dixie Highway in Stuart or Tamualipas Taqueria just up the road, both South of Indian.

Lots of Thai restaurants in the area I see, can someone recommend and Korean or Mediterranean or Middle eastern (yeah I know kind of vague).
