Many people take outings up in the mountains to pick them.
A good Huckleberry patch is a closely guarded secret.
It's a seasonal event for many folks around here, just like finding chanterelle and morel mushrooms.

Maybe it's time for some recipes?

Ingredients
1 recipe pastry for a 9 inch double crust pie
  • 4 cups huckleberries
  • 2 1/2 tablespoons tapioca
  • 2/3 cup white sugar
  • 1/4 teaspoon salt
  • 1/2 cup packed brown sugar
  • 1 tablespoon cider vinegar
  • 1 tablespoon butter
Directions
  1. Mix together the huckleberries, tapioca, sugar, salt, brown sugar, and apple cider vinegar.
  2. Pour mixture into unbaked pie shell. Dot top with butter. Add top pastry and flute edges.
  3. Bake at 400 degrees F (205 degrees C) for 15 minutes. Then turn oven down to 350 degrees F (175 degrees C) for 45-55 minutes. Longer if berries are frozen.

The little Cafe in Crescent Oregon, on Highway 97 between the Crater Lake turnoff and Bend has seasonal huckleberry pie.

My favorite though is the Huckleberry Mojito.

Simple Syrup recipe (original version was the blackberry/blueberry from here)

1 cups sugar
1 1/2 cups water
30-40 Huckleberries

Bring to simmer over medium heat; simmer 5 minutes (sugar should be dissolved). Add berries and turn off heat. Cool to room temperature. Strain out berries and pour into bottle.

Then the Mojito recipe.

Huckleberry Mojito Recipe
Makes 1 tall drink

2 oz Dark Rum
5 leaves of fresh mint
1 hand full of ice
¾ ounce huckleberry simple syrup (½ cup sugar, ½ cup water, ¾ cup pureed huckleberries)
2 oz of soda water
Additional mint, lime wedges for garnish.

1. Wash the lime wedges & mint.
2. Muddle the rum, mint, and huckleberry simple syrup with ice.
3. Pour everything into a glass and add the soda water.
4. Garnish with a wedge of lime and a sprig of mint.

The rum can be replaced with more huckleberry simple syrup and soda water for a non-alcoholic version.

I have a large patch of mint always growing, so it's also fresh cut!

Yogurt-Cucumber Dip

Ingredients:

1 qt plain yogurt
1 large cucumber
2+ cloves garlic
1 tsp olive oil
Cheesecloth

Put a strainer in large pan. Lay cheesecloth in strainer with a lot of overlap. Put yogurt in cheesecloth, use cheesecloth overlap to cover yogurt. Place heavy can of beans on cheesecloth to force out water. Place overnight in fridge.

Grate a large cucumber; add minced, fresh garlic to taste. And about a teaspoon of olive oil.

Mix together with the yogurt and let sit overnight. Serve with toasted pita triangles. Note: Will get more garlicky the longer it sits.
