Yavapai County Registering Rare Meat Offenders? (inspectors, restaurant, lawsuits)

While reading the menu from my favorite Mexican restaurant, I noticed the following:

"Yavapai County Health Department requests that we keep a record of persons who request undercooked beef."

One can only speculate on the rationale behind this.

I believe it is tied into the salmonella and other beef illnesses. In case people start getting sick from the beef, I guess they will know who you are?

Straight from the horses mouth... I emailed the Yavapai Health Department and this was their reply:

Yavapai Health Inspectors are not requesting that restaurant keep records of person’s ordering undercooked beef or any other kind of under cooked food items. However, some food establishment have a company policy and do request a form to be filled out and signed if a customer is ordering uncooked items, for liability reasons. I’m am not aware of any in Yavapai that are doing this.

Excellent sleuthing! I suspected it was a way to protect the restaurant for lawsuits from food poisoning. Nervy!
