I'm thinking about cutting the cable and getting Sling TV, which includes the NFL network. My question is, can you watch ANY game you want on the NFL network, including games that are on ABC, NBC, CBS, and Fox, including Monday and Thursday games?

Nope. They generally carry Thursday Night Football which you can also watch on Amazon Prime.

This coming season, Thursday Night Football is exclusively on Amazon, so essentially no live football on NFL Network.

Currently, the only way to (legally) watch out-of-market games on Sundays is via NFL Sunday Ticket, which is only available through DirecTV. That deal expires with the end of the 2022-23 season, and I frankly can't wait for Amazon or Apple or SOMEBODY to pick up those rights so the vast majority of us can actually watch those out-of-market games.

^^ This. I have heard that Apple is the front runner right now to get the Sunday Ticket package.

Unless they raised the package in the last 18 months (quite possibly), the package with NFL network is $35 a month.
