Vitamix partnered with the CIA to produce this superior kitchen appliance. (CIA, in this instance, stands for the Culinary Institute of America.) Although this sleek machine looks like a blender, to call it that is to do it a disservice -- it is so far above and beyond an ordinary blender that it belongs in a whole new category. It does the work of several appliances, which may partly justify its $600 price tag.

The Vitamix has a two horsepower motor, making it a noisy but effective machine. A powerful vortex forces food down the center and then up from the blade, to ensure thorough blending. The power switch has a 'high' setting or a 'variable' setting, so the speed can be adjusted on a knob labeled 1 through 10. It's possible to make soup right in the blender because the friction of the blades generates enough heat that after four or five minutes on 'high,' the liquid is piping hot. On the other hand, you can also make instant ice cream from a blend of frozen fruit and cream, so no need to deal with all the trouble of ice cream makers. The blender's jar holds 64 ounces, which is more than enough for most kitchen projects.

The Vitamix is a great appliance to own if you want to improve your health. Getting the five to nine recommended servings of fruits and vegetables is easy when you can make smoothies. Whole grain bread can be made completely from scratch, and it results in a much healthier product than even most homemade breads. When you buy flour at the store, no matter how organic it might be, it has most likely been sitting in storage for some time and may contain a certain amount of mycotoxins, the poisonous byproduct of fungus. With the Vitamix, it's possible to make whole wheat bread from fresh wheat berries. All that's required is to dry grind the berries, which creates the flour. This ensures the freshest possible ingredients and maximum potential for healthy food.

Vitamix creates a juice drink that is much more nutritious than what a standard juicer can offer. That's because you're blending up the whole fruit or vegetable, not just extracting the juice. And the food cells are ruptured on a microscopic level, making the nutrients more available for use by your body.

Vitamix is perfect for busy people because meals are so easy to prepare. If you have children, this is an ideal mechanism for getting more nutritious food into them, because smoothies are fun foods - even if they do contain foods like kale or spinach. If you're retired and don't want to spend a lot of time on cooking, this is a one-stop food preparation device.

Since this unit was co-designed by students of haute cuisine, they've included a cookbook of 20 recipes, as well as tips and tricks for making delicious, tasty meals. In addition, there's another cookbook with over 300 recipes concocted specifically for the Vitamix by the nation's top chefs. It's in 'easel' form, so the book stands up on the counter on its own.

$600 is a lot of money to spend on a blender, but ultimately, it's well worth the cost.
