In studies, Gavan J. Fitzsimons, a professor who studies consumer psychology at Duke’s Fuqua School of Business, has presented participants with a range of menu choices — sometimes just unhealthy items, sometimes neutral items (like a fish sandwich) and sometimes healthy choices like salad. It turned out that including a healthy option did change people’s behavior — by making them eat more unhealthily.

I didn't read the article but a business guy doing a study healthy food options? Sounds fishy (pun intended).

I'm a pretty active guy with a pretty healthy diet and I likes me some fries here and there.

Well, if the only healthy choice is an ordinary salad, I can see why it wasn't taken. So there is a problem with the way the study was set up.

I agree. I consider a salad the thing that comes before the meal, not a meal itself. I do like to eat healthy though and when I'm somewhere that offers real alternative MEALS, not just salad, I pick them. At Subway I get one of the 300 calories or so subs, with low fat mayo and cheese, and I pick Baked Lays as my side. I get to eat relatively the same meal other people are eating so I don't feel deprived.

Many places only offer salads as the "healthy" alternative, but how many times can I eat salad? One summer I was trying to be "good", but when family came down, where ever we went to eat on the boardwalk, whether pizza place, burger place, whatever, my choice was chicken caesar salad or chicken caesar salad. I ate them until I hated them.

The article clearly states that that is one example of a healthy choice option, not the only one.
