Charcoal/wood is the way to go. I only use my gas grill to boil corn water...

Yeah these grills use lump charcoal, with heat controlled by top and bottom vents. Add wood chips, as desired. They are started with an electric probe so there's no lighter fluid. Can't wait to experiment with it. There's tons of YouTube videos out about Kamado cooking.

With my canal, I need to get better at throwing the cast net and smoke mullet. Mullet dip is pretty tasty. I hear mullet fillets are a treat if smoked.

Speaking of the cast net, I was released from care by my surgeon today. Will get better and stronger over the next year but it's nice not to have to "shoulder the burden" of all those PT and Dr visits.

Once you go to a ceramic grill like the Kamado or BGE, you'll never go back! One thing you may want to try on it (it'll work on a gas grill as well) if you're planning on cooking fish is a grill mat. It keeps the fish from falling through the grates, plus the fish won't stick to it.

Yup...have one of those I use often. It came with my Magma boat grill...which I haven't used since moving to FL. Maybe I should sell that too. It's like new.

Messing About,

Now smoking food on a ceramic smoker is right in my wheelhouse. I will be able guide through the process of cooking on your new ceramic smoker. Perhaps some payback for the fishing on salt water expertise you have shared with me. Don't want to turn the fishing thread into a cooking thread but here are a few pictures aka (food porn) to share. This Saturday shows a strong incoming tide from late morning through very late afternoon, with favorable 10 MPH winds and a light chop. Planning to launch from Placida ramp at 8 and hunt Pompano, both early and late. Trout and Reds in between. If I can remember to charge my iPhone, I will broadcast a few times on Periscope during the trip.

Fisher...how'd it go? I've been to the Bayronto Wreck once and landed a Greater Amberjack...one week before they opened! Great memory though.

Wondering if any of you were following my broadcast last week? We had up to 13 viewers at a time. Crushing the ratings, eh?
