I bet this has been discussed before but I can't find it. What are the pluses and minuses to a north or south facing pool? Is the sun warm enough Dec. - Mar. to help heat it? Or is it just you are sitting in the sun?
I thought south would be preferable but now found a house we really like with a north pool. Does it really make a big difference?

yes.
south you will get far more sun in the winter.

Ours faces east and in the winter we lose the sun by 3 totally

BUT I have been told Europeans love sun and South and Americans prefer North and shade

I much prefer the North. I spend most of my day in the lanai and it stays very cool in the shade. Not great in the winter months, but most of the year it is perfect. The pool should get some sun no matter which direction, but the covered lanai area stays shady with it facing north.

When you are new down here you think you want full sun all the time....the longer you are here the more you appreciate the shade!

South-facing properties are generally valued a bit higher. Regarding the sun heating your pool in the winter, natta. You won't be swimming without a heat pump, unless you like 65-70 degree water and air temps in the low 70s. Brrrrr.
