Its the month of september and all im am catching is about a 2, 3, 4 lb catfish. My question is are they edible or contain to much mercury? And whats the name of catfish ccaught in the charlotte harbor area? There like a dark greyish, and when you turn them to the side like a bronze shiny on them?

People fish the Harbor all the time, fish are very edible. Don't know the specific species you are talking about but be sure to check the fishing regs.

They have like a sharp needle looking thing on top of them to defend themselves.

They are edible but be careful of those spines. They are very very toxic.

Is there any thing in particular once your scaling them theres no poison in them or around the area of the spine?

No poison around the spike areas but they do harbor much bacteria. If you do get scratched or punctured by a spike, bleed it and clean it ASAP. Keep an eye on it for infection. And no scales.
I find it's best to filet it and then place it on a cutting board skin side down and run your filet knife between the skin and flesh, staying parallel and as close to the skin as possible. Much easier than trying to pull the skin off with pliers.
