For a quick breakfast sandwich, I sometimes make fried baloney. Sort of like imitation pork roll..
You just have to use 'good' baloney!

crushed red pepper flakes, cayenne, jalapeño, or something for a touch of heat is optional
but I wouldn't recommend too much, it will overpower the other flavors

Combine the following and let it meld for a 1/2 hours or so. I toss the garlic into this mixture too
1/4 cup white balsamic vinegar
1/3 cup olive oil
salt and ground black pepper to taste
(I like to add minced green peppercorns, but can't find 'em in Fla yet. )

Combine everything and let it sit in the fridge for a few hours.
Hey!! You stole my Greek Chopped Salad recipe! Except I use goat cheese instead of Feta.

My wife has been getting pork roll for years in PG. I think she gets it at the Burnt Store & 41 Publix.

It is pretty good and most of us from that area were raised eating it as a breakfast meat or on sandwiches with eggs.

Obviously it comes in a roll that you slice and fry in a pan like you would ham. But because of it's shape sliced we would cut or slice it about 1/3 worth from edge towards middle so that when it fried, the edges did not curl.

Try it. Many of us would eat a pork roll sandwich like a hamburger with ketchup on it.

Same family, different shape, slightly different shade of pink, slightly different taste (hate to use the term 'sour', not the best description, but I guess its hard to describe)...
