I beleive Bmateo already made this point, and I agree that the taco stops being "authentic" the moment you say you are using shrimp or fish as the meat. A real authentic taco would have the toppings you described in the original post but with meat Bmateo later described like cow's head (shredded head meat), lengua (tongue), cachete (cheek meat) or pork ect..
Pescada and carmones, every bit as "authentic" as the rest.
Whatever you want to call it...I want a taco with shrimp or fish + cilantro, onion and hot sauce.
Well you've got some good recommendations for that now. You can be the judge if they are "authentic" enough for you - regardless of what other people think.

Most places will have shrimp or fish (that's the only meat I eat)...
I just hate it when a taco gets "Americanized" with cheese, slaw, etc and they still try to pass it as authentic.
If it helps, my mother ONLY likes Americanized tacos, and was horribly disappointed when I took her to Los Comales
