Wondering if anyone could suggest a vacation spot in the mountains, not too far from cary where we could possibly rent a cabin/house with the hopes of having fresh water fishing near by?

not sure by 'how far from cary' you mean, but the MOUNTAINS are about 3 hours away....

New River between Boone on up into virginia through galax has great smallmouth fishing and beautiful scenery. Those are the closest two points to get too (2.5-3 h drive), but there are rental properties scattered throughout between the two, particularly in proximity to the blue ridge parkway.

About 4 1/2 hours to Nantahala Gorge. Amazing scenery, great vacation options including white water rafting, and kayaking. Very good trout fishing.
Nantahala Lake is also beautiful.
We stayed in a private house just off the Lake. The ride from the Gorge to the lake is AMAZING. Its so curvy and follows the river up the mountian. The downside was it took 30 min to drive the 12 miles out to the main road. It was paved, just so curvy in parts. It was great!

Most of the time I head in the other direction and go to Morehead City/Atlantic Beach area for Ocean fishing. (Bigger Fish!)

I have been told that Lake Wylie (other side of Charlotte) is a top bass fishing lake. Should be plenty of vacation rentals ther.

What all are you looking to fish for? Trout? Smallmouth? Largemouth? There are lakes and streams all over out there but it depends on your goal...Look for other NC outdoor forums for more guidance about fishing.
