You know, there is such a thing as getting second opinions for dentists. I've done it several times.
I've also learned to say a few majic words to the dentist (as well as to doctors). Words like NO and WHY and ARE THERE ALTERNATIVES TO THIS?
Being a pro-active, educated patient is the best quality medical/dental care you can ever get.
Trust me, I'm am the first one to ask a million questions, especially when it comes to my children. The problem is when I'm the one in the chair I tend to have anxiety issues and then I don't think clearly. There's enough to be worried about with dentists who have a different general philosophy of care I shouldn't also have to factor in crooked ones trying to make a fortune on my teeth. That's why I'm hoping to start with a minimalist and go from there.

I sympathize - really I do. Maybe a better plan would be to take the dentist's treatment plan home with you before he/she does any work and review it later?
I have heard that small cavities can repair themselves just like broken bones can repair themselves. It makes sense to me.
I don't have a personal recommendation for a natural dentist, but I have heard of local dentists recommended by some natural-minded people. I don't know anything about these dentists personally, but they all come recommended by alternative/natural leaning folks:
