+1 for Mami Nora's. My kids love the chicken, rice, and sweet plantains. The black beans are also delicious. It's a great place to take kids. (Raleigh location.)
Pullen Park in Raleigh is a great place to take out-of-towners. Just a really sweet park with fun stuff to do. Great little concession stand as well.
I think it would be great if you could pull off a day trip to the beach - my family likes Wrightsville for day trips to the beach.
If the ocean is too far consider Seaforth Beach at Jordan Lake. The water might be a little chilly still during spring break but kids love to swim there. There is a nice sand beach for playing, too!
