I added a link for ya.

NC is still pretty agriculturally based outside of the Triangle, Triad and Charlotte. I know several folks who raise beef cattle. There's a big local food scene here so quality beef (and lots and lots of pork) are always in demand. Folks I know raise Black Angus, but I've seen a variety on my travels around. I pass a field with a couple of hairy coos every day taking my kid to school. Not sure if they're really Scottish Highland, but they look like they might be. I don't know that much about cattle, but my uncle in the mountains of Va raised beef cattle so I know just enough to be dangerous.

NC State has a big agriculture and vet program. They got cows on campus right there in Raleigh!

Thanks. I saw the link in your edit and posted right above this one to say thanks. I can't express how much more comfortable that link made me with the idea of North Carolina.

I'll be working a ranch first, buying down the road after I get my footing. I actually have experience with Bison. Dumb as boxes of rocks, but fast, strong and temperamental!!

If you were searching on "ranches" that might have been why you were having trouble getting many hits. I think, but am not sure, that most NC cattlefolks say "farm" instead of "ranch". 'Course, you buy it you can call it whatever you want. I think NC farmers have traditionally run pretty diversified operations, grow a little tobacco (not so much now), raise some livestock, grow a little corn, etc.

NC State really does have a pretty well known program in the College of Agriculture and Life Sciences. Plenty of folks who raise livestock around, it's just that city-data sees most of the relocators who are coming for a job in RTP not on the ranch!
