Where do you go for gluten free pizza and, most importantly, why? From what I've read on previous threads, we have 3 options in Raleigh: Lily's, Zpizza, and Mellow Mushroom. I've never been to Zpizza, and have only had 'regular' pizza at the other two places (of which Lily's was my favorite but I do enjoy MM, too). I am looking for a crust that is less crispy, more doughy but that might be a tall order. We are going out for pizza tonight so chime in!
I think most of the pizza places I have been that have a gluten free crust just use a pre-made one. Seems most of them use Udi's. I think it would be hard to have a dedicated house-made gluten free crust in a kitchen full of flour.
I read that Lily's makes their own and that Mellow Mushroom used to use a packaged one but now makes theirs (and MM apparently has a special area of the kitchen for it?), so I would imagine there would be some difference between the two in taste and texture. Of course, I'm reading a million things on a million different websites, so not sure my info is correct.

My adult daughter swears it is THE best GF pizza she has had in years. We have tried all those mentioned and she says no, they are not nearly as good... It is worth the trip!!

For 3 & 4, what specifically about the texture? From #2 it seems like you might prefer crispy and we prefer less crispy/more doughy, so we might like the texture if crispiness was a factor in those two. We were leaning toward MM when I posted this... might still be the winner for tonight at least.

I have no idea. I asked her to be more specific and she couldn't elaborate. My wife's weird about food. Her foods can't touch on the plate. I once saw her prop up one side of her plate with a coaster so that her baked bean sauce stayed on its side of the plate. She's weird about food texture as well. She won't eat shrimp because of the texture. She can't eat eggs in the morning, yet loves them for lunch or dinner. She likes cooked spinach, but will not eat raw spinach in a salad because of the texture.
We ended up at Mellow Mushroom. My only negative was that I thought the pizza smelled a little funny (wasn't purposely sniffing it lol). Texturally I liked it! My husband thought it was a bit dry but I didn't. I told him if I had walked in there and they served me that pizza, not knowing it was GF, I would have thought "hmm... this tastes a bit different, but not bad different". It was a great size. Now I'm excited to try some of the other ones!

Good to know. I haven't had a gluten free pizza at Mellow Mushroom recently. Had one a year or two ago and it was Udi's crust which I like fine, but the spouse, who was splitting it with me, didn't.
you might want to give the gluten free crust at moonlight pizza a go. we really like their pizza anyhow, but when we had a GF friend with us, the waiter told her he actually prefers their GF crust to regular. she said she really liked it & found it as good/better than others she's had.
