Lots of RTPers with kids living in Cornerstone Apartments on High House Road in Cary. The heart of suburbia so it may not appeal to you but it's walkable to grocery shopping, a couple of restaurants, nail salon, indoor putting green, etc etc. Oh and an urgent care and a pediatrician, always good when you have kids, LOL. They have pool and playground.
Like Brampton Moors, a good place to get boots on the ground here till you get it all figured out. I know they do short term leases too.

My wife and I lived in NYC for 5 years and then spent the last year in Southern Connecticut (where she grew up). Even 50 minutes outside the city it can get very expensive fast and its hard to find something decent. So we are looking at RTP as an area where we might be able to have a better standard of living than anywhere in the tri-state area (which is just mad). Also since my wife won't get any paid maternity leave we will only be on my salary come Christmas, hence the lower price point.
I always lived in or close to a decent sized city - I grew up in Stockholm, Sweden, then moved to Honolulu, New York, Stamford - where it is quite easy to find activities and people to meet. So I am trying to get a feeling for if my wife and I could be happy here - especially since I will be working from home and she will be at home with our new baby. We want to make sure we can meet new people - otherwise we will just drive each other bonkers. Part of me get the feeling it might be better to move down here if you have an actual job here - since you will automatically meet new people that way.
Anyways, just rambling.
I do appreciate all the help. We have decided to pick two-three addresses per your recommendations in each area (Cary, Raleigh, Durham, and Chapel Hill) and just drive through the neighborhoods and get a feel for it (if that is possible).
Oh, one more thing. Is there anything that we should see today in terms of a typical active Saturday - might be a park, downtown area, etc? Just something that is going on with some hustle and bustle and you can walk around for a bit. We are traveling with our 6 pound dog, so it has to be somewhat dog friendly

Affordable and great Cary location. Might be a good landing place to get your boots on the ground in Cary.
I do not have experience with the complex itself but I live in this general area and I agree with Mike. Its very family friendly. It is very close to Bond Park Fred G. Bond Metro Park which adults, kids and pets enjoy alike. It is not close to the hustle and bustle of downtown (like you'd find in Raleigh etc) but there still are a lot of fun things to do. It is close to Apex http://www.apexdowntown.com/ and Cary http://www.heartofcary.org/ downtown which is really nice and quaint. Its also close to the area Twingles mentioned and many other similar shopping areas + a few minutes from the mall and Crossroads.

I have lived in Brampton Moors for four years and love it here. The apartments are older but well maintained (nothing fancy like the newer apartment but very adequate) and the neighborhood is quiet and safe. There is a small lake, pool, basketball court, sand volleyball court, and tennis court on the property and the grounds are very well kept. I see lots of families with young kids at the pool in the summer.
Having a teenaged son, one thing that I really like is that there are not very many other teenagers in the neighborhood. That might seem a little odd to say but we moved from a townhome community in Maryland that had started going downhill and the teenagers in the neighborhood roamed the streets late at night and caused trouble. Here, there are just a handful of teenagers (six including my son on the bus to the high school) and they are all very well behaved (or if they are not, they do their getting in trouble elsewhere lol).
I believe the rent is in the low $800s for a two bedroom.
