For making homemade mozzarella. Can be pasteurized but NOT ULTRA PASTUERIZED.

Any leads?

(Yes, I know I can get this at whole foods, earth fare,etc. I'd like to try super fresh milk if I can find it.)

Rare Earth Farms at the State Farmers Market sells milk. It is definitely pasteurized (but not ultra as far as I know). All milk will be pasteurized in NC since raw milk is illegal to sell. Homeland Creamery sells their milk at Earth Fare (and possibly some Whole Foods) and they do a "slow and low" pasteurization.

You can buy unpasteurized milk if you're using it for your "pets", but it's not sold at the farmer's market. Pretty sure you have to know someone who knows someone- that type of thing. Try Maple View Farms for pasteurized... don't remember it being ultra, but could be wrong.

Is it? I have never tried to make mozzarella. I will say it is SO much better when it is freshly made and still warm! Enjoy!

Yep, it's easy. But wear gloves when you handle the hot cheese (ask me how I know).

Rare Earth Farms at the Farmer's Market does sell it, but the price was about 3X what I've previously paid at Whole Foods, etc. Sorry, but that's ridiculous.

Ended up going back to Earth Fare who has a new provider from a NC farm called Homestead Creamery. Glass bottles that required a refundable $2 per bottle deposit. About $3.50 per half gallon. And the whole milk was great - had to actually break the cream at the top and shake it before it would pour properly. I think this is the same brand that Whole Foods carries.

Highly recommended (but the bottle deposit thing is a PITA).

If you want to come over to Chapel Hill or a little further west you can get un-homogenized cream top milk from Ran-Lew dairy at Weaver Street and other locations. It is pasteurized since it is illegal to sell unpasteurized milk for human consumption in NC.
