If you visit Natural Museum in Raleigh (free, awesome, and a must see), they sell NC-related trinkets, including necklace. Could be a good souvenir.

I second the Etsy recommendation. You're not going to find that variety of styles and prices anywhere else.

The State Museum of History in downtown also has a nice gift shop with lots of NC based items, a really nice jewelry and book selection.
