Can people move to this area of NC and be "non-religious" and still accepted? I don't mean preach atheism, but rather not belong to any church. Does that limit your social/professional life?
We're looking at the area for relocating but already being "Yankees" I suppose that might put us at a disadvantage. I have a son I want to have a happy life and be able to make friends and enjoy where he lives. He's friendly and kind, but not religious.
We're not out to change anyone's mind or to mock other people's cultures or beliefs. We would be respectful of the South and Southern culture/people.
OP, you sure are over-thinking this. We are up to our butts in Yankees. Some are devout. Some are not.
Pay your bills, be quiet and polite, and help a stranger in need, and you will do pretty well whether you ever go to church or not.
My experience with this is that I'm a 65 year old Raleigh native. I haven't been to church or Sunday school since I graduated from high school. I mind my old business and have never been bothered about it.

So you can cook up a little white lightning already? Kewl.
Sorry, I changed my angle after you quoted me. Reminds me of when one of my "southern buddies" shared some "peach brandy" with me. Hint: It came in a mason jar and was clear as water.....
