There is a little playground in Five Points where your kids can play and every now and then a train goes by. It is called Roanoke Park. Here is the location, but they seem to always remove my links...but here goes:
Park Details for National, State and Local Parks at ParkGeek.com

You can also ride the kids train at Pullen Park, although it may be open only on weekends now...or possible closed for the season. Check out the City Parks and Rec. site for exact details.

You can watch them at the junction of Morrisville Carpenter and 54 in Morrisville as you are delayed by the barriers to let them thru

You might contact the guy that owns this site... RTP Railfan - Exploring Southern Railways Through Research Triangle Park

He can probably give you some ideas.

Don't forget Seaboard Cafe in Raleigh for yummy food, great shopping for garden plants and accessories. Our children loved it during the warm spring days.

You know, if you go to the station platform in Cary or Raleigh, you can have a sandwich and watch the train up close.
Just a matter of AmTrak being on schedule.

I have a 3 year old train lover too. We live in Garner and sometimes catch the trains that go through downtown. If you haven't been, you've got to go to the NC Transportation Museum in Spencer. They have a "Day out with Thomas" where you can actually ride Thomas the Tank Engine, this year it's in Sept/Oct. They also have engines that run daily that you can ride. My kids loved it last year. Spencer's 2 hours away (near Salisbury) but it's a nice overnight trip with the kids and the town's really quaint.

Thanks for asking this question! I'll have to check these spots out.

A little removed from your question but The Museum of Life and Science in Durham has a great little train for kids to ride. Also, check out Southern Rail in Carrboro if you want to eat inside a railroad car.

My 3 year old loves both!
