Beasley's is okay, but since I'm from Louisiana, Popeye's is the standard I hold all fried chicken too.
This might be blasphemous, but I find Bojangles really salty.

OP; if you're looking for NC-nastolgia fried-chicken and are looking for something quick and ubiquitous in the state; Bojangles is the easy answer. For a more "fancy" sit-down setting; Dames in Durham is good (though a little overpriced IMO).
Smithfields is also good for the more casual/fast food option; though not as good as Bojangles IMPO.
Are these the 2 best higher end options around? I've been to both and wasn't blown away. Love me some friend chicken so hope to find something better. Had those 2 Bojangles, Biscuitville, The Pit, and Lucky 32 Southern Kitchen so far. I would give Dame's the edge both in food and service. Biscuitville was pretty tasty for the price!
I'll just say that, if you are not used to eating food with that high of a fat content, watch out! A few years ago I went to Dames before a matinee Christmas show and loved every minute of the time I was actually eating it. However, a few hours afterward, I found myself missing part of the show because I had....well...."issues" that could only be managed properly in the men's room.
Clyde Cooper's does a pretty reasonable job. I had some Smithfield's just last week and it bit back around 3:00 am. Too much 'breading' and kinda greasy.
I've lived in the south for 26 years and tried Bojangles for the first time just now based on comments here.
Good stuff! I like that their coating is a bit spicy. All in all, much better than KFC.
