Fill the areas between the trees with pure manure. Several inches and lots of it. Bet her dog runs though it ONCE and it stops.

The dog is OFF LEASH in an uncontained area. That's illegal, and dangerous to the dog as well as other dogs who are walking nearby on leash, and people who might be bitten. This isn't about the tree or the grass. It's about dog and human safety.

First, warn the neighbor that you are taking the following steps, and explain that its about LEASH laws and safety. Don't even mention the landscaping issues - they obviously don't care. Warn them in writing or use that cellphone to tape the conversation.
Right, that was my first thought as well. So not ok for her to have the dog off leash like that, and off leash on your property takes it further.

She can take her dog to doggie daycare, hire a dog walker, but she seems to have gotten a dog that's not great for her lifestyle (dog park is a great place to throw a frisbee...).

The manure will be great for the trees. Be sure to wet it down good.

Soil erosion can damage the roots. We watched a crape myrtle nearly die because the landscapers kept mowing and weed whacking over it. Finally, owners convinced them to put a circle of mulch around the tree and leave it alone.

If the manure doesn't work, put up a barrier. Huge pots, fence, farm equipment, garden gnomes, ... whatever will keep the dog from his appointed rounds.

Planting rose bushes or similar shrubs might work as a living fence.

I think that's the idea. Dog gets covered in manure, eats it & throws it back up, or whatever and that prompts the dog-owner to finally keep her dog from going in the OP's yard.

One of my old neighbors took out a restraining order as last resort against a dog owner for a similar complaint. After several fines it stopped. If it were me I would repair the area around the tree and put up something temporary to keep the dog out.

Get an outdoor cat, it's cheap, they're super cuddly and will not only get the dog in line, it will help manage all sorts of critters.

Did the OP say where they were? In unincorporated Wake County, there is not a requirement to leash dogs. (We get to shoot guns and burn things too! ).

Wake County indeed has a leash law.

§ 91.07 ANIMALS AT LARGE
