So are you referring to fresh water fish (from rivers and lakes) as opposed to ocean fish?

I think the phrase "unsalted water" means something else to many people.

So confusing.....

Spring water is not the same as "fresh water".

Original question sounded like "Who will cook fish in spring water".

Did you mean "Who serves fresh water fish"? Any place that serves trout or catfish may buy them from farms. Just ask. But you're not going to find many places serving the same fish you catch in local waters.

I think there may be a language barrier issue here. I'm guessing the OP is asking for freshwater fish.

Spring water is something very specific, and doesn't just mean water that hasn't been salted. It is water that comes from a natural spring (underground source)

My guess is that Henry is seeking suggestions for restaurants where he could get an unsalted fish dish. Most restaurants salt all of their fish dishes, including adding it to the cooking stock when poaching. Too much salt definitely does a number on blood pressure. Anyone on a doctor prescribed heart-healthy DASH diet would want to avoid it.

I would suggest Sushi as the safest option, and plenty of good places around. Peking Garden on Millbrook advertises low sodium dishes. Irregardless Cafe in Raleigh May also be able to accommodate.

Other suggestions?

If that’s the case, then anywhere that grills or sautées fish ... just ask for it not to be salted.

Hi OP, do you mean freshwater fish like trout, bream, or bass (freshwater)? Or are you talking about the preparation method?

The only freshwater fish I've ever seen on a restaurant menu are trout, catfish and tilapia.

I guess it depends on your spring-- a LOT of "designer spring waters" are both naturally salty and carbonated ("Seltzer", for example. San Pellegrino… long list.)

I found this in the lunch/dinner menu of the Cracker Barrel in Morrisville:

Lemon Pepper Grilled Rainbow Trout
Lightly seasoned boneless spring water trout fillet grilled until fork tender (160 cal). Plus your choice of two Wholesome Fixin’s Sides (15-180 cal each).
